1 - Corn market
Corn is characterized by being intended both for human consumption and for being used to feed animals. In both cases, some type of industrial or on-farm transformation may be necessary. A summary of possible uses of corn can be found in Table 1. In the following sections, the main transformations necessary for animal and human consumption will be explored.
1.1 - Human consumption
Even for human consumption, corn requires some processing. With the exception of consumption when the grains are in a milky, or "green" state, dried grains cannot be consumed directly by humans.
Corn can be industrialized through wet and dry milling processes. The latter is the most used in Brazil. This process results in by-products such as corn flour, cornmeal, grits, bran, oil and defatted wholemeal flour, involving smaller production scales and less industrial investment. The industrial processing of corn yields, on average, 5% of its weight in the form of oil.
Through the wet grinding process, the main by-product obtained is starch, whose product name has practically been replaced by the commercial name cornstarch.
